Sausage Breakfast Sandwiches

Ingredients:

• English muffins
• Breakfast sausages
• Cheese slices
• Butter
• Eggs
• Salt and pepper
• Cooking spray

Instructions:

1. Build a campfire and let it burn down until you have a good bed of hot coals.
2. Cook the breakfast sausages over the fire until they’re browned and cooked through.
3. While the sausages are cooking, prepare the eggs. Crack two eggs into a bowl and whisk them together. Add salt and pepper to taste.
4. Heat a small cast-iron skillet over the fire and spray it with cooking spray.
5. Pour the eggs into the skillet and cook them, stirring occasionally, until they’re scrambled and cooked through.
6. Split the English muffins in half and butter them lightly.
7. Place the English muffins, cut side down, on the grill grates over the fire and toast them until they’re lightly browned.
8. Add a slice of cheese to each English muffin half and let it melt.
9. Place a cooked breakfast sausage on top of the cheese on one-half of the English muffin.
10. Add a scoop of scrambled eggs on top of the sausage.
11. Top with the other half of the English muffin to make a sandwich.
12. Repeat with the remaining English muffins, sausages, and eggs to make as many sandwiches as you need.
