Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Servings: 4–6
Ingredients
- 1 pound Italian sausage (mild or spicy)
- 1 tablespoon olive oil, if needed
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups chicken broth
- 1 package (9–12 ounces) refrigerated cheese tortellini
- 1 cup heavy cream
- 2 cups fresh baby spinach
- 1/2 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper, to taste
- Crusty bread, for serving (optional)
Instructions
1. Brown the Sausage
Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook for 6–8 minutes, breaking it into small pieces as it browns. Drain excess grease if needed.
2. Add the Aromatics
Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic, Italian seasoning, and red pepper flakes, if using. Cook for another 30 seconds until fragrant.
3. Build the Broth
Pour in the diced tomatoes and chicken broth. Stir everything together, scraping up any flavorful bits from the bottom of the pot. Bring the soup to a gentle boil.
4. Cook the Tortellini
Add the cheese tortellini and cook according to the package directions, usually about 3–7 minutes for refrigerated tortellini. Stir occasionally so the pasta cooks evenly.
5. Make It Creamy
Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Add the fresh spinach and let it wilt for 1–2 minutes. Avoid boiling the soup once the cream has been added.
6. Season and Serve
Taste the soup and add salt and black pepper as needed. Ladle into bowls and top with extra Parmesan cheese. Serve with crusty bread for dipping, and enjoy a cozy fall meal!
Tips for Making This Soup While Camping
Prep ingredients ahead of time. Dice the onion and mince the garlic at home, then store them in sealed containers in a cooler until you’re ready to cook.
Use a Dutch oven or sturdy pot. A heavy-bottomed pot works well on a camp stove and helps the soup heat evenly.
Make cleanup easier. Since everything cooks in one pot, you’ll spend less time washing dishes and more time enjoying your camping trip.
Keep the tortellini from getting too soft. If you’re making the soup ahead, cook and store the tortellini separately, then add it when reheating. This helps it maintain its texture.
Customize your bowl. Try spicy sausage for extra heat, add mushrooms for more flavor, or stir in chopped kale instead of spinach.
What to Serve With Creamy Sausage & Tortellini Soup
Make your campsite dinner even better with a few simple sides:
- Garlic bread or toasted baguette slices
- A fresh green salad
- Grilled cheese sandwiches
- Roasted vegetables
- Extra Parmesan and cracked black pepper
